Why is it so hard?

Why is it so hard to accept that Gluten is no longer a part of my life?  Maybe because I do not yet have the experience to make all the yummy foods I once enjoyed in a GF fashion.  I want to be able to go out to eat with my family and not have to struggle over what I can eat on the menu, besides salad.  Even the salad has to have things taken away and substituted to meet my GF/veg requests.  Why is that every salad has to come with Chicken or Bacon or Turkey or Steak... ?

Food used to be so straight forward.

Now it is full of moral questions, physical consequences and many MANY emotions.

I am still so new to all this that I am sure it should all fade in time and not seem so intense, but that is not where I am today.  I have been in limbo so long that to really commit to what I know I need to do is a big deal.  I guess it must be that way, no matter what the life change is.

I really looking forward to using this blog as a motivation for me to get out of myself and into some really yummy food my body and my heart and my soul can feel good about.

Here's to the future...

Farmer's Market

So I have to make a shout out to (one of) my local Farmer's Markets.  The Hillsboro Farmer's Market
on Saturday isn't huge, but it has a great selection of thinks I love to get for my family.  I spent $20 this morning, and had a nice trip out with my oldest munchkin.  Some of my prize spoils are yummy blackberries (1.50/pint!) Yellow Plums, Italian Basil (Tufo rice wraps, here I come!) and a beautifully long chubby zucchini to stuff in the next day or so.  I spent a total of $20 and brought home a ton of fresh local produce.  It's doesn't get better than that.

As a Gluten Free Vegie lover, this time of year, when the markets abound, are so exciting.  Thet help me get excited to broadon my culinary horizon and try new foods.  Getting my husband to try them can be tricky, but we've only been married 2 years so it's an Art Form in friendly manipulation I am learning to execute.

I hope to post some good resources I have been finding online, but for now... tummy's a'rummblin and I got plenty to fill it with!!

Until Then,

Nicole

Game Plan

So I just wanted to share with you all that I have a game plan and vision for this blog.  I am going to share my life along with every bit of useful information I come across (and hopefully remember to save or write down!)

It may take me just a bit to get going but it will all come together.  I welcome any information you have that you have posted on your on blog for recipes, reviews related to being a gluten free vegetarian.  I will happily post them and link back to your site, giving you the full credit and appreciation you should receive.

I look forward to this journey!

Getting Started!!

I have struggled with adhering to a gluten free and vegetarian diet for some time now.  Call it laziness, rebellion, denial.  It doesn't really matter.  What does matter is that I take care of myself so that I can take care of my family.  So here goes!

I have learned a bit about what I need to do to get started in this and tips to stick to it, but I am just going to start at the beginning.
